Lemon rice

Lemon rice is popular rice variety from South India. It is a easy and light recipe  which can be prepared by adding cooked rice to peanuts and lemon juice. They can be good option for picnic box or for kid’s lunch box  also.

Lemon rice

Ingredients:

Rice :  1 and half cup cooked

Peanuts: 1/2 cup

Salt: to taste

Oil: 2 tbsp

Mustard seeds or rai: 1 tsp

Curry leaves: 7-8

Dried red chilli: 2

Asafoetida: a pinch

Methi dana or fenugreek seeds: 1/2 tsp

Turmeric powder or haldi: 1/4 tsp

Coconut grated: 2 tbsp

Dhuli urad dal or split black gram skinless: 1 tbsp

Lemon juice: 3 tbsp

Method:

1. Heat oil in a kadai. Add methi seeds, hing, methi, urad dal and saute.

2. Add curry leaves, dried red chiili, peanuts, heeng and saute again.

3. Add rice, lemon juice, salt and mix well. Cook rice for 3-4 minutes.

4. Garnish with grated coconut and serve hot.
