Description: A classic Bengali delight, Alu Tofu is a flavorful and satisfying potato-based curry that’s both comforting and indulgent. As a seasoned chef, I’m thrilled to share my secrets for crafting this beloved dish, which is sure to become a staple in your kitchen.

Prep Time: 20 mins | Cook Time: 30 mins | Servings: 4-6

Ingredients:
– 2 large potatoes, peeled and diced into 1-inch cubes
– 1/2 cup firm tofu, cut into small cubes
– 2 medium onions, chopped
– 2 cloves garlic, minced
– 1 medium tomato, diced
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon red chili powder
– 1/2 teaspoon garam masala powder
– 1/2 teaspoon salt
– 2 tablespoons vegetable oil
– 2 tablespoons mustard oil (optional)
– 2 tablespoons tomato puree
– 1 cup water
– Fresh cilantro leaves, chopped (for garnish)

Step-by-Step Instructions:
1. Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the chopped onions and sauté until they’re lightly browned, about 5 minutes.
2. Add the minced garlic and sauté for another minute, until fragrant. Then, add the diced potatoes and sauté for 5 minutes, until they start to soften.
3. Add the tofu cubes and stir well to combine with the potatoes and onions. Cook for 2-3 minutes, until the tofu is lightly browned.
4. Add the cumin, coriander, turmeric, red chili powder, and garam masala powder. Stir well to combine and cook for 1 minute, until the spices are fragrant.
5. Add the diced tomato, salt, and water. Stir well to combine, then bring the mixture to a boil.
6. Reduce the heat to low and let the curry simmer, covered, for 20-25 minutes, or until the potatoes are tender and the flavors have melded together.
7. Stir in the tomato puree and cook for an additional 2-3 minutes, until the curry has thickened slightly.
8. Taste and adjust the seasoning as needed.
9. Garnish with chopped cilantro leaves and serve hot over steaming basmati rice or with naan bread.

Pro Cooking Tips:
– To get the best results, use firm, high-quality tofu and avoid over-processing the potatoes, as they’ll continue to cook and soften during the simmering process.
– For an added depth of flavor, use mustard oil instead of vegetable oil for sautéing the onions and garlic.

Serving Suggestions:
– Serve the Alu Tofu curry over a bed of fluffy basmati rice, garnished with chopped cilantro and a dollop of raita (a yogurt-based side dish).
– Serve with a side of naan bread or roti for a satisfying and filling meal.
– Experiment with different spice levels by adding more or less red chili powder to suit your taste preferences.
