1/2 teaspoon garam masala powder
1/4 teaspoon amchur powder (dried mango powder)
1/4 teaspoon red chili powder
Salt, to taste
2 tablespoons vegetable oil
2 cups water

For the Bhature:

2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 cup ghee (clarified butter)
3/4 cup lukewarm water

Step-by-Step Instructions:

1. Start by making the Chole. Heat oil in a large pan over medium heat and sauté the onions until they’re lightly browned, about 5 minutes. Add the garlic and cook for another minute.
2. Add the cumin, coriander, garam masala, amchur powder, and red chili powder to the pan and stir well. Cook for 1-2 minutes, till the spices are fragrant.
3. Add the chickpeas, tomatoes, salt, and water to the pan. Stir well to combine, then bring the mixture to a boil. Reduce the heat to low and simmer, uncovered, for about 30 minutes, or until the Chole thickens slightly.

For the Bhature:

1. In a large mixing bowl, whisk together the flour, salt, and baking powder.
2. Add the ghee and mix till the dough comes together in a ball.
3. Gradually add the lukewarm water to the dough and knead for about 5 minutes, until it becomes smooth and pliable.
4. Cover the dough with a damp cloth and let it rest for 30 minutes.
5. Divide the dough into 6-8 equal portions and shape each portion into a ball.
6. Roll out each ball into a thin circle, about 1/8 inch thick.
