Prep Time: 20 mins | Cook Time: 30 mins | Servings: 4
Ingredients:
1 block firm tofu, drained and cubed
2 cups fresh spinach leaves
2 cloves garlic, minced
1 small onion, finely chopped
1 teaspoon ground cumin
1 teaspoon curry powder
1/2 teaspoon garam masala powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 can (14 oz) coconut milk
2 tablespoons vegetable oil
For the garlic naan:
+ 1 cup warm water
+ 2 teaspoons active dry yeast
+ 3 cups all-purpose flour
+ 1 teaspoon sugar
+ 1/4 teaspoon salt
+ 2 cloves garlic, minced
+ 1 tablespoon vegetable oil
Step-by-Step Instructions:
1. In a blender or food processor, combine the spinach leaves, onion, garlic, cumin, curry powder, garam masala powder, and salt. Blend until smooth and creamy, adding a splash of water if needed to achieve the desired consistency. Set aside.
2. Heat 1 tablespoon of oil in a large skillet over medium heat. Add the tofu cubes and cook for about 5 minutes on each side, or until golden brown and crispy. Remove from heat and set aside.
3. In the same skillet, add another tablespoon of oil if needed. Pour in the spinach puree and stir to combine with any remaining oil and spices. Cook for 2-3 minutes, stirring occasionally, until the mixture thickens slightly.
4. Add the coconut milk to the skillet and stir well. Bring the mixture to a simmer, then reduce heat to low and let cook for about 5 minutes, or until the sauce has thickened to your liking.
5. Meanwhile, prepare the garlic naan. In a large mixing bowl, combine the warm water, yeast, sugar, and salt. Let the mixture sit for 5-7 minutes, or until the yeast is activated and foamy.
6. Add the flour, minced garlic, and vegetable oil to the bowl. Mix until a sticky dough forms. Knead the dough for about 5 minutes, or until smooth and elastic.
7. Divide the dough into 4-6 equal portions, depending on how large you want your naan to be. Roll out each portion into a ball and then flatten slightly into a disk shape.
Pro Cooking Tips:
To enhance the flavor of the palak tofu, add a pinch of amchur powder (dried mango powder) or lemon juice towards the end of cooking.
For an extra crispy naan, bake in a preheated oven at 400°F (200°C) for 5-7 minutes after grilling or pan-frying.
Serving Suggestions:
Serve the palak tofu over basmati rice or with some crusty bread.
Garnish with toasted cumin seeds, chopped cilantro, and a dollop of raita (yogurt and cucumber sauce) for added freshness.
Pair with a side of roasted vegetables or saag paneer (spinach curry with cheese cubes) for a satisfying meal.
