Prep Time: 30 mins | Cook Time: 45 mins | Servings: 4-6

Ingredients:

2 large potatoes, peeled and grated
1 large onion, finely chopped
2 cloves of garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/4 teaspoon garam masala powder
1/2 teaspoon salt
1/4 teaspoon baking soda
2 tablespoons lemon juice
1 cup besan (chickpea flour)
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/2 cup lukewarm water
1/2 cup plain yogurt
1/4 cup ghee or vegetable oil
Fresh cilantro leaves, for garnish
Kadhi Pakora curry:
+ 2 cups plain yogurt
+ 1 cup besan (chickpea flour)
+ 1/2 cup water
+ 1/2 teaspoon salt
+ 1/4 teaspoon baking soda
+ 2 tablespoons lemon juice
+ 1/4 teaspoon garam masala powder
+ 1/4 teaspoon ground cumin

Step-by-Step Instructions:

1. In a large bowl, combine the grated potatoes, chopped onion, minced garlic, cumin, coriander, turmeric, red chili powder, garam masala, salt, and baking soda. Mix well.
2. Add the lemon juice and mix until the potatoes and onion are well coated.
3. In a separate bowl, whisk together the besan, all-purpose flour, and baking powder. Gradually add the lukewarm water and mix until a smooth batter forms.
4. Heat the ghee or oil in a deep frying pan over medium heat. When the oil is hot, drop small portions of the batter into the oil, about the size of a small marble.
5. Fry the fritters until they are golden brown, about 3-4 minutes. Drain the fritters on paper towels.
6. To make the Kadhi Pakora curry, combine the yogurt, besan, water, salt, baking soda, lemon juice, garam masala, and cumin in a blender or food processor. Blend until smooth.
7. Heat the curry over medium heat, whisking continuously, until it thickens slightly, about 10-12 minutes.
8. To assemble the Kadhi Pakora, place the fried fritters in a serving dish and pour the curry over them. Garnish with fresh cilantro leaves.

Pro Cooking Tips:

For an extra crispy exterior and fluffy interior, make sure the oil is hot enough before frying the fritters. Test the oil by dropping a small piece of the batter into the oil; if it sizzles and rises to the surface, the oil is ready.
To prevent the fritters from absorbing too much oil, pat them dry with a paper towel after frying.

Serving Suggestions:

Serve the Kadhi Pakora with a side of steaming hot basmati rice, naan bread, or roti for a comforting and satisfying meal.
Garnish with additional cilantro leaves and a dollop of plain yogurt, if desired.
For a variation, add some chopped vegetables, such as bell peppers or carrots, to the batter before frying the fritters.
