Prep Time: 30 mins | Cook Time: 25 mins | Servings: 4

Ingredients:

1 block of firm tofu, drained and cut into small cubes
2 cups of fresh spinach leaves
2 cloves of garlic, peeled and chopped
2 tablespoons of olive oil
1 small onion, finely chopped
2 teaspoons of ground cumin
1 teaspoon of ground coriander
1/2 teaspoon of ground cayenne pepper
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1 cup of vegetable broth
2 tablespoons of plain yogurt (optional)
2 cups of all-purpose flour
1/4 teaspoon of active dry yeast
1/2 teaspoon of salt
1/4 cup of lukewarm water
2 tablespoons of melted butter
Garlic, minced (for garnish)

Step-by-Step Instructions:

1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Place the tofu cubes on the prepared baking sheet and bake for 15-20 minutes, or until golden brown and slightly puffed. Remove from the oven and set aside.
3. In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
4. Add the chopped garlic, cumin, coriander, cayenne pepper, salt, and black pepper to the pan. Cook for 1-2 minutes, stirring constantly, until the spices are fragrant.
5. Add the fresh spinach leaves to the pan, stirring until wilted. Cook for an additional 2-3 minutes, or until the spinach has reached your desired level of doneness.
6. Stir in the vegetable broth and plain yogurt (if using). Bring the mixture to a simmer and cook for 2-3 minutes, or until the sauce has thickened slightly.
7. Add the roasted tofu cubes to the spinach sauce and stir to coat. Simmer for an additional 2-3 minutes, or until the tofu is fully coated.
8. Meanwhile, prepare the Garlic Naan Bread. In a large mixing bowl, combine the flour, yeast, and salt. Gradually add the lukewarm water, mixing until a dough forms. Knead the dough for 5-7 minutes, or until smooth and elastic.
9. Divide the dough into 4-6 equal portions, depending on desired naan size. Roll out each portion into a thin circle, about 1/8 inch thick.
10. Heat a non-stick skillet or griddle over medium heat. Cook the naan breads for 1-2 minutes on each side, or until golden brown and puffed. Brush with melted butter and garnish with minced garlic.
