After four decades of cooking, I can confidently say that this recipe is a masterclass in balancing spices, creamy richness, and the perfect balance of flavors.
Prep Time: 20 mins | Cook Time: 30 mins | Servings: 4-6
Ingredients:
1 medium onion, finely chopped
2 cloves of garlic, minced
1 medium tomato, diced
1 can (14 oz) of artichoke hearts, drained and chopped
1 bunch of fresh spinach leaves, chopped
1 teaspoon of grated fresh ginger
1 teaspoon of ground cumin
1 teaspoon of ground coriander
1/2 teaspoon of ground cinnamon
1/2 teaspoon of ground cardamom
1/4 teaspoon of cayenne pepper
1/2 teaspoon of salt
1/4 teaspoon of black pepper
2 tablespoons of vegetable oil
2 tablespoons of butter
2 cups of full-fat coconut milk
2 tablespoons of plain Greek yogurt
Fresh cilantro leaves, for garnish
Step-by-Step Instructions:
1. Heat the oil in a large saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 30 seconds.
2. Add the diced tomato and cook for 2-3 minutes, until the mixture is well combined and the tomato is tender. Stir in the grated ginger, cumin, coriander, cinnamon, cardamom, and cayenne pepper. Cook for 1 minute, until the spices are fragrant.
3. Add the chopped artichoke hearts and cook for 2-3 minutes, until they’re heated through. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
4. Add the coconut milk, butter, salt, and black pepper. Stir until the butter has melted and the mixture is smooth. Bring the curry to a simmer and let cook for 5-7 minutes, or until the flavors have melded together and the sauce has thickened slightly.
5. Stir in the Greek yogurt and adjust the seasoning as needed.
Pro Cooking Tips:
To ensure the artichoke hearts are tender, make sure to drain and rinse them thoroughly before chopping.
Don’t overcook the spinach, as it can quickly become mushy and lose its texture.
Serving Suggestions:
Serve the Spinach and Artichoke Curry over fluffy basmati rice or with a side of warm naan bread. Garnish with a sprinkle of cilantro leaves and a dollop of raita (a yogurt and cucumber side dish) for added freshness.
Experiment with different types of yogurt, such as flavored or goat’s milk, to add unique twists to the curry.
