Prep Time: 30 mins | Cook Time: 45 mins | Servings: 4-6

Ingredients:

1 large onion, diced
2 cloves of garlic, minced
1 medium-sized carrot, peeled and grated
1 medium-sized potato, peeled and diced
1 cup of mixed vegetables (bell peppers, cauliflower, and green beans)
1 can of diced tomatoes (14 oz)
1 cup of vegetable broth
2 tbsp of vegetable oil
1 tsp of ground cumin
1 tsp of ground coriander
1 tsp of ground cinnamon
1/2 tsp of ground cardamom
1/2 tsp of ground cayenne pepper
Salt, to taste
2 cups of brown rice
2 cups of water
For the raita:
+ 1 cup of plain yogurt
+ 1/2 cup of grated cucumber
+ 1/4 cup of chopped fresh cilantro
+ 1/2 tsp of salt
For the garlic naan bread:
+ 1 1/2 cups of all-purpose flour
+ 1/4 tsp of sugar
+ 1/2 tsp of active dry yeast
+ 1/2 cup of lukewarm water
+ 2 cloves of garlic, minced
+ 1/4 cup of butter, melted

Step-by-Step Instructions:

1. In a large pan, heat 1 tablespoon of oil over medium heat. Add the diced onion and cook until it’s translucent, about 5 minutes. Add the minced garlic and cook for another minute.
2. Add the grated carrot and diced potato to the pan. Cook for about 5 minutes, stirring occasionally, until they start to soften.
3. Add the mixed vegetables, diced tomatoes, vegetable broth, cumin, coriander, cinnamon, cardamom, and cayenne pepper to the pan. Stir well to combine.
4. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes, or until the vegetables are tender.
5. Meanwhile, cook the brown rice according to package instructions using 2 cups of water.

Pro Cooking Tips:

To get the best flavor out of your spices, make sure to toast them in a dry pan for a few seconds before grinding them.
Don’t overcook the vegetables – they should retain some crunch to add texture to the dish.
For an extra creamy raita, add a tablespoon or two of heavy cream or sour cream to the yogurt.

Serving Suggestions:

Serve the veg curry over the cooked brown rice, garnished with some fresh cilantro and a dollop of raita.
Offer some garlic naan bread on the side for a satisfying crunch.
For a more substantial meal, serve the curry with some naan bread and a side of raita.
