This trio is a match made in culinary heaven!
Prep Time: 30 mins | Cook Time: 45 mins | Servings: 4-6
Ingredients:
2 medium-sized onions, diced
3 cloves of garlic, minced
2 medium-sized carrots, peeled and grated
2 medium-sized potatoes, peeled and diced
1 large red bell pepper, diced
1 large can of diced tomatoes (14 oz)
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons vegetable oil
2 cups water
2 tablespoons heavy cream
Fresh cilantro leaves for garnish
For the garlic naan bread:
+ 1 1/2 cups all-purpose flour
+ 1/4 teaspoon salt
+ 1/4 teaspoon sugar
+ 1/2 teaspoon active dry yeast
+ 1/2 cup lukewarm water
+ 2 cloves of garlic, minced
For the raita:
+ 1 large cucumber, peeled and grated
+ 1 cup plain yogurt
+ 1/2 teaspoon ground cumin
+ 1/2 teaspoon ground coriander
+ Salt, to taste
+ Fresh cilantro leaves for garnish
Step-by-Step Instructions:
1. In a large pan, heat 1 tablespoon of oil over medium heat. Add the diced onions and sauté until they’re translucent, about 5 minutes. Add the minced garlic and cook for an additional minute, stirring constantly to prevent burning.
2. Add the grated carrots, diced potatoes, and diced red bell pepper to the pan. Cook for 5 minutes, stirring occasionally, until the vegetables start to soften.
3. Stir in the cumin, coriander, cayenne pepper, salt, and black pepper. Cook for 1 minute, until the spices are fragrant.
4. Add the diced tomatoes, water, and heavy cream to the pan. Bring the mixture to a simmer, then reduce the heat to low and let it cook for 20-25 minutes, stirring occasionally, until the vegetables are tender and the sauce has thickened.
Pro Cooking Tips:
To take your curry to the next level, make sure to cook the spices for at least 1 minute to allow the flavors to meld together.
Don’t overcrowd the pan when cooking the vegetables. Cook them in batches if necessary, to ensure they cook evenly.
Serving Suggestions:
Serve the vegetable curry with a side of garlic naan bread, torn into bite-sized pieces. You can also serve it with steamed basmati rice or with a simple green salad.
For a refreshing twist, serve the raita as a palate cleanser between bites of curry. Simply garnish with fresh cilantro leaves and serve chilled.
