Best Vegetable Tagine with Preserved Lemons (North African) Recipe
Description: As a seasoned chef, I’ve had the pleasure of exploring the vibrant flavors of North African cuisine. This Vegetable Tagine with Preserved Lemons is a masterclass in balancing sweet, sour, and savory notes, all wrapped in a fragrant, slow-cooked broth. The preserved lemons add a tangy, umami depth that elevates this dish to new heights. Trust me, this recipe will become a staple in your kitchen!
Prep Time: 20 mins | Cook Time: 45 mins | Servings: 4-6
Ingredients:
2 medium-sized eggplants, cut into 1-inch cubes
1 large red bell pepper, cut into 1-inch pieces
1 large zucchini, cut into 1-inch slices
1 large red onion, cut into 1-inch wedges
2 cloves of garlic, minced
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/2 teaspoon ground turmeric
1/4 teaspoon ground cayenne pepper
Salt and black pepper, to taste
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
2 preserved lemons (see note), sliced into thin strips
1 cup vegetable broth
1/2 cup chopped dried apricots
1/4 cup chopped dates
1/4 cup chopped prunes
2 tablespoons honey
2 tablespoons lemon juice
Step-by-Step Instructions:
1. Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add the cumin, coriander, cinnamon, turmeric, and cayenne pepper. Cook for 1-2 minutes, stirring constantly, until the spices are fragrant.
2. Add the eggplant, bell pepper, zucchini, and onion to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften and brown.
3. Add the garlic, parsley, cilantro, preserved lemon strips, vegetable broth, apricots, dates, prunes, honey, and lemon juice to the pot. Stir to combine.
4. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 30-40 minutes, or until the vegetables are tender and the sauce has thickened.
Pro Cooking Tips:
To take this dish to the next level, make sure to use high-quality, flavorful preserved lemons. You can find them at Middle Eastern or North African markets, or make your own (see note).
Don’t overcrowd the pot, as this can lead to steaming instead of slow-cooking. Cook the vegetables in batches if necessary.
For an added layer of complexity, add some chopped fresh herbs, such as mint or dill, to the pot during the last 10 minutes of cooking.
Serving Suggestions:
Serve the Vegetable Tagine with crusty bread, over couscous or rice, or with a side of roasted meats or vegetables.
Garnish with additional fresh herbs, a dollop of yogurt, or a sprinkle of chopped nuts for added texture and visual appeal.
Note: To make your own preserved lemons, slice 4-6 lemons thinly and pack them into a clean glass jar with a tight-fitting lid. Cover the lemons with a brine made from 1 cup water, 1 cup white vinegar, and 1/2 cup granulated sugar. Seal the jar and store it in the refrigerator for at least 30 days, or until the lemons are tender and the liquid has turned into a syrup.
