Zafrani pulao

Zafrani pulao is a rich rice variety in which dry fruits , milk  are used.

Rice: 1 cup

Water: One and a half cup

Almonds: 12-15

Raisins: 15-20

Cashew nuts or kaju: 5-7

Ghee:2 tbsp

Saffron or kesar: a pinch soaked in a little milk

Nutmeg powder or jayfal: 1/4 tsp

Sugar: 1/4 cup

Milk: 1/2 cup

Green cardamom powder: 1/4 tsp


1.Wash and soak rice for fifteen minutes.

2.Heat ghee in a heavy bottom pan and fry all dery nuts. Keep them aside and slice almonds and cut cashewnuts in halves.

3.Boil milk , saffron, sugar in a pan.

4.In same pan in which we had fried nuts add rice, nutmeg powder, cardamom powder and saute on low flame for two minutes.

5.Add boiled milk, water, raisins. Stir and cook on low heat till they are cooked properly.

6.Garnish with dry fruits and serve hot.
