Prep Time: 30 mins | Cook Time: 45 mins | Servings: 4-6

Ingredients:

1 cup Sabud (Sago) pearls
1/2 cup Gram flour
1/4 cup semolina
1/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup lukewarm water
Vegetable oil for frying
For the Vegetable Curry:
+ 2 medium-sized carrots, peeled and chopped
+ 1 medium-sized potato, peeled and chopped
+ 1 large onion, chopped
+ 2 cloves of garlic, minced
+ 1 medium-sized tomato, chopped
+ 1 teaspoon ground cumin
+ 1 teaspoon ground coriander
+ 1/2 teaspoon turmeric
+ 1/2 teaspoon red chili powder
+ Salt, to taste
+ 2 tablespoons vegetable oil
+ 2 cups water
For the Garlic Naan:
+ 2 cups all-purpose flour
+ 1 teaspoon sugar
+ 1/4 teaspoon salt
+ 1/4 teaspoon active dry yeast
+ 1/2 cup lukewarm water
+ 2 tablespoons butter, melted
+ 2 cloves of garlic, minced
+ Fresh cilantro, chopped (optional)

Step-by-Step Instructions:

1. Start by soaking the Sabud pearls in water for at least 4 hours or overnight. Drain the water and grind the Sabud into a coarse mixture.
2. In a large mixing bowl, combine the ground Sabud, Gram flour, semolina, baking soda, and salt. Mix well.
3. Gradually add the lukewarm water to the Sabud mixture and knead until a smooth dough forms. Cover and let it rest for 30 minutes.
4. Divide the dough into 6-8 portions, depending on the desired size of your Sabud Vada.
5. Shape each portion into a round patty and flatten it slightly.
6. Heat about 1-2 inches of vegetable oil in a deep frying pan over medium-high heat. When the oil is hot, carefully slide in the Sabud Vada and fry until they’re golden brown, about 3-4 minutes per side.
7. Remove the fried Sabud Vada from the oil and place them on a paper towel-lined plate to drain excess oil.

For the Vegetable Curry:

1. Heat 1 tablespoon of vegetable oil in a large saucepan over medium heat. Add the chopped onion and sauté until it’s translucent, about 5 minutes.
2. Add the chopped carrots, potato, and tomato. Cook for another 5 minutes, stirring occasionally.
3. Add the cumin, coriander, turmeric, and red chili powder. Cook for 1 minute, stirring constantly.
4. Add the water and bring the mixture to a boil. Reduce the heat to low and simmer, covered, for 20-25 minutes, or until the vegetables are tender.
5. Season the curry with salt to taste.

For the Garlic Naan:

1. In a large mixing bowl, combine the flour, sugar, and salt. Mix well.
2. Add the yeast and lukewarm water to the flour mixture. Mix until a smooth dough forms.
3. Knead the dough for 5-7 minutes, until it becomes elastic and smooth.
4. Divide the dough into 4-6 portions, depending on the desired size of your naan.
5. Roll out each portion into a ball and flatten it slightly into a disk shape.
6. Heat a non-stick skillet or tava over medium heat. Cook the naan for 1-2 minutes on each side, or until they’re lightly browned and puffed.
7. Brush the naan with melted butter and sprinkle with minced garlic.

Pro Cooking Tips:

To ensure the Sabud Vada doesn’t absorb excess oil, pat them dry with a paper towel before frying.
For an extra crispy Garlic Naan, brush the naan with a little water before cooking.
Experiment with different vegetables in the curry to suit your taste preferences.

Serving Suggestions:

Serve the Sabud Vada hot with the Vegetable Curry and a dollop of yogurt, if desired.
Garnish the curry with chopped cilantro, if desired.
Offer the Garlic Naan on the side for a delightful textural contrast.

Enjoy your mouthwatering Sabud Vada without Stuffing with Vegetable Curry and Garlic Naan!
