– 1/2 cup of tomato, diced
– 1/4 cup of cilantro, chopped
– Salt, to taste
– 1 tablespoon of lemon juice
Step-by-Step Instructions:
1. To begin, heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the diced onions and sauté until they are translucent and lightly browned, stirring occasionally. This should take around 8-10 minutes.
2. Add the minced garlic and sauté for another minute, stirring constantly to prevent burning.
3. Add the grated carrots, diced potatoes, red bell pepper, eggplants, and zucchinis to the pan. Stir well to combine. Cook for 5 minutes, stirring occasionally, until the vegetables start to soften.
4. Add the cumin, coriander, turmeric, cayenne pepper, salt, and black pepper to the pan. Stir well to combine. Cook for 1 minute, stirring constantly.
5. Add the diced tomatoes to the pan. Stir well to combine. Cook for 5 minutes, stirring occasionally, until the vegetables are tender and the sauce has thickened.
6. Cook the brown rice according to the package instructions using 2 cups of water. Set aside.
7. For the Garlic Naan Bread, combine the flour, salt, sugar, and yeast in a bowl. Gradually add the lukewarm water and mix until a dough forms. Knead the dough for 5-7 minutes until it becomes smooth and elastic.
8. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour, or until it has doubled in size.
9. Preheat a non-stick skillet or tava over medium heat. Divide the dough into 6-8 equal portions. Roll out each portion into a thin circle. Brush with vegetable oil and sprinkle with minced garlic.
10. Cook the Garlic Naan Bread for 1-2 minutes on each side, or until it is golden brown and puffed up.
11. For the Raita, combine the plain yogurt, grated cucumber, diced tomato, chopped cilantro, salt, and lemon juice in a bowl. Stir well to combine. Refrigerate until ready to serve.
12. To assemble the dish, place a scoop of the Vegetable Curry over a bed of brown rice. Serve with a piece of Garlic Naan Bread and a dollop of Raita on the side.
