Best Sabud Vada without Stuffing Recipe
Description: A classic Gujarati snack, Sabud Vada is a delightful treat that can be enjoyed any time of the day. This recipe takes a twist on the traditional version by omitting the stuffing and letting the sabud (sago) shine in all its crispy glory. Crisp on the outside, fluffy on the inside, these vadas are sure to become your new favorite snack.
Prep Time: 15 mins | Cook Time: 20 mins | Servings: 12-15 Sabud Vadas
Ingredients:
1 cup sabud (sago)
1/2 cup lukewarm water
1/4 teaspoon salt
Vegetable oil, for frying
Optional: Chutney or aamras, for serving
Step-by-Step Instructions:
1. Rinse the sabud thoroughly and soak it in lukewarm water for at least 4 hours or overnight. Drain the water and blend the sabud into a coarse paste using a mixer or grinder.
2. In a large bowl, combine the sabud paste with salt. Mix well until the salt is evenly distributed.
Pro Cooking Tips:
To achieve the perfect crispiness on the outside and fluffiness on the inside, make sure to not overmix the sabud paste. Stop blending as soon as it forms a coarse mixture.
Use a non-stick pan or a cast-iron skillet for frying the vadas, as they tend to stick to other surfaces.
Step-by-Step Instructions (continued):
1. Heat about 2 inches of vegetable oil in a deep frying pan over medium heat until it reaches a temperature of around 350°F.
2. Using your hands or a spoon, shape small portions of the sabud mixture into spherical shapes. You should end up with around 12-15 vadas.
3. Carefully slide the vadas into the hot oil and fry them in batches for about 5-6 minutes on each side, or until they turn golden brown.
4. Using a slotted spoon, remove the fried vadas from the oil and place them on a paper towel-lined plate to drain excess oil.
Serving Suggestions:
Serve the Sabud Vadas warm with a dollop of chutney or aamras for a delightful snack experience.
You can also serve them as part of a Gujarati thali (platter) with a variety of dishes like dal, rice, and raita.
For a more indulgent treat, pair the vadas with a steaming hot cup of chai (tea) or a cold glass of lassi (yogurt-based drink).
