Prep Time: 20 mins | Cook Time: 30 mins | Servings: 4-6 people

Ingredients:

1 block of extra-firm tofu, drained and cut into small cubes
2 cups fresh spinach leaves
2 medium onions, thinly sliced
3 cloves garlic, minced
1 tablespoon ghee or vegetable oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (optional)
Salt, to taste
Fresh cilantro leaves, for garnish
For the Garlic Naan:
+ 1 cup all-purpose flour
+ 1/4 teaspoon salt
+ 1/4 teaspoon sugar
+ 1/2 teaspoon active dry yeast
+ 1 tablespoon ghee or vegetable oil
+ 3/4 cup lukewarm water
+ 2 cloves garlic, minced

Step-by-Step Instructions:

1. In a large pan, heat the ghee or oil over medium heat. Add the sliced onions and sauté until they’re translucent and slightly caramelized (about 8 minutes).
2. Add the minced garlic to the pan and cook for an additional minute, stirring constantly to prevent burning.
3. Add the cubed tofu to the pan and cook until it’s lightly browned on all sides (about 5-6 minutes). Remove the tofu from the pan and set aside.
4. In the same pan, add the cumin, coriander, turmeric, and red chili powder (if using) and cook for 1 minute, stirring constantly to prevent burning.
5. Add the fresh spinach leaves to the pan and stir until they’re wilted and cooked through (about 2-3 minutes).
6. In a separate bowl, combine the flour, salt, sugar, and yeast. Gradually add the lukewarm water and knead the dough for about 5-7 minutes, until it becomes smooth and elastic.
7. Divide the dough into 4-6 equal portions, depending on how large you want your naan to be. Roll out each portion into a ball and then flatten it slightly into an oval shape.
8. Heat a non-stick skillet or tava over medium heat. Cook the naan for about 2 minutes on each side, until it’s lightly browned and puffed up.
9. Brush the naan with melted butter or ghee, if desired.

Pro Cooking Tips:

For an extra-crispy garlic naan, try cooking the dough in a skillet with some oil before baking.
To prevent the tofu from breaking apart during cooking, make sure it’s well-drained and pat dry with paper towels before adding it to the pan.
