3 cloves of garlic, minced
1 large carrot, peeled and grated
1 large red bell pepper, seeded and chopped
1 can (14 oz) of diced tomatoes
1 teaspoon ground cumin
1 teaspoon curry powder
1/2 teaspoon turmeric powder
1/4 teaspoon cayenne pepper
Salt, to taste
2 tablespoons vegetable oil
2 cups water
Fresh cilantro leaves, for garnish

For the Crispy Naan Bread:

1 package of active dry yeast (1 tablespoon)
2 cups all-purpose flour
1/4 teaspoon salt
1/4 cup lukewarm water
2 tablespoons vegetable oil

For the Raita:

1 large cucumber, peeled and grated
1/2 cup plain yogurt
1 tablespoon chopped fresh cilantro
Salt, to taste
1 tablespoon lemon juice

Step-by-Step Instructions:

1. Make the Naan Bread: In a mixing bowl, combine yeast, flour, and salt. Gradually add lukewarm water, mixing until a smooth dough forms. Knead for 5 minutes, then rest for 30 minutes. Divide into 6 equal portions. Roll each portion into a ball and flatten slightly using a rolling pin.
2. Cook the Naan Bread: Heat a non-stick skillet or tava over medium heat. Cook each naan bread for 1-2 minutes on each side, until puffed and crispy. Brush with melted butter and keep warm.

3. Make the Vegetable Curry: In a large pan, heat oil over medium heat. Add onions and sauté until lightly browned (5-6 minutes). Add garlic, carrot, bell pepper, cumin, curry powder, turmeric, and cayenne pepper. Cook for 2-3 minutes, stirring occasionally.
4. Add the Tomatoes and Water: Stir in the diced tomatoes and water. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes or until the vegetables are tender.

5. Finish with Salt and Garnish: Season with salt to taste. Garnish with fresh cilantro leaves.

6. Assemble the Dish: Serve the vegetable curry hot with crispy naan bread and a dollop of raita on top.
