Here is the recipe article:
Prep Time: 20 mins | Cook Time: 25 mins | Servings: 4
– 1 block of extra-firm tofu, drained and cubed
– 2 cups fresh spinach leaves
– 2 cloves garlic, minced
– 1 small onion, finely chopped
– 1 tablespoon butter or vegan alternative
– 1 teaspoon cumin seeds
– Salt, to taste
– Fresh cilantro, for garnish
– For the garlic naan bread:
+ 1 cup all-purpose flour
+ 2 teaspoons sugar
+ 1/4 teaspoon salt
+ 1/4 cup lukewarm water
+ 2 tablespoons butter or vegan alternative
+ 2 cloves garlic, minced
1. In a blender or food processor, combine spinach leaves, garlic, and chopped onion. Blend until smooth to create the spinach puree (sag).
2. Heat butter or vegan alternative in a large skillet over medium heat. Add cumin seeds and let them sizzle for a few seconds before adding the cubed tofu. Cook until the tofu is golden brown on all sides, about 5-7 minutes.
3. To make the garlic naan bread, combine flour, sugar, and salt in a bowl. Gradually add lukewarm water to form a soft dough. Knead for 2-3 minutes before covering and letting it rest for 10 minutes.
4. Divide the dough into 6-8 equal portions and roll each one into a ball. Flatten each ball slightly into an oval shape. Brush with melted butter or vegan alternative and sprinkle with minced garlic. Cook in a non-stick skillet over medium heat until the naan bread is golden brown, about 2 minutes per side.
5. To assemble the dish, place cooked tofu cubes on a serving platter or individual plates. Spoon the spinach puree (sag) over the tofu and serve with warm garlic naan bread.
– Make sure to press excess water from the tofu before cubing for best results.
– Adjust the amount of cumin seeds according to your personal taste preference.
– Serve the sag tofu with a side of basmati rice or roti for a filling meal.
– Garnish with fresh cilantro and a dollop of vegan yogurt, if desired.
