Urad dal-methi poori

Here’s my mom recipe : my favorite pooris. I am using urad dhuli dal paste and kasoori methi which give a special aroama to it.

Urad dhuli: 1/2 cup (soaked and paste)

Wheat flour:2 cup

Maida: 1/2 cup

Besan: 1/2 cup

Sooji: 1/2 cup

Ajwain: 1/2 tsp

Salt: to taste

Red chilli powder: 1/2 tsp

Kassori methi: 2 tbsp

Oil: 2 tbsp+ for frying

Saunf or fennel seeds: 1 tsp

Heeng or asafoetida: a pinch

Haldi powder: 1/4 tsp


1.Mix all the ingredients given above. Knead a stiff dough using water. Dough should be smooth but not very tight. Keep it aside for half an hour.

2.Divide the dough into equal portions. Apply little oil over each portion and roll them into circles which are not very thin.

3.Heat oil in a kadai and put a poori in it. It will puff up. Turn it and fry poori from both sides.

4.Serve pooris with achar or allo ki sabji.
