10-12 bamboo skewers, soaked in water for at least 30 minutes

Live oil, for brushing

Salt and pepper, to taste

For the Chimichurri Sauce:

1 cup fresh parley leaves

14 cup fresh organs leaves

2 gloves garlic, minded

1 tablespoon red wine vinegar

1 tablespoon olive oil

Salt, to taste

Fresh lemon juice, for serving (optional)

Step-by-Step Looking Instructions:

1. Reheat your drill to medium-high heat (about 400°F or 200°C).

2. Thread the vegetables onto the skewers in an alternating pattern, leaving a small space between each piece.

3. Rush both sides of the vegetable skewers with olive oil and season with salt and pepper.

4. Drill the skewers for 10-12 minutes, turning occasionally, until they’re tender and slightly charred.

5. While the vegetables are trilling, prepare the chimichurri sauce. In a bowl, combine parley, organs, garlic, red wine vinegar, olive oil, salt, and a squeeze of fresh lemon juice (if using). Six well to combine.
