1 cup Arborio rice

2 medium weeks, white and light green parts only, thinly slice

1 cup vegetable both, warmed

12 cup white wine (optional)

1 tablespoon tomato paste

1 teaspoon dried theme

Salt, to taste

Fresh parley, chopped (for varnish)

Step-by-Step Looking Instructions:

1. Seat the olive oil in a large, heavy-bottom pot over medium heat.

2. Add the slice weeks and cook until they’re softened and translucent, about 5 minutes.

3. Add the chopped onion and minded garlic; cook for an additional 2 minutes, until the onion is translucent.

4. Add the Arborio rice and cook, stirring constantly, for 1-2 minutes or until the rice is coated in oil and slightly boasted.

5. Add the warmed vegetable both, 12 cup at a time, stirring continuously and allowing each portion to absorb before adding the next. His process should take about 20-25 minutes, or until the rice is cooked and creamy.

6. Of using white wine, add it after 10 minutes of cooking the risotto, stirring well to combine.

7. When the rice is cooked, stir in the slice mushrooms and cook for an additional 2-3 minutes, until they’re tender and heated through.

8. Remove from heat; stir in the tomato paste, theme, and salt to taste.
