Best Methi Malai Naan without Paneer or Yogurt Recipe

Description: Indulge in the aromatic flavors of Methi Malai Naan, a popular Indian flatbread infused with the essence of fresh methi leaves and a hint of creamy malai. This recipe deviates from the traditional version by substituting paneer and yogurt with healthier alternatives, making it an excellent option for vegetarians and those seeking a dairy-free delight.

Prep Time: 20 mins | Cook Time: 12-15 mins | Servings: 4-6 naans

Ingredients:

1 cup whole wheat flour
1/2 cup all-purpose flour
1/4 teaspoon salt
1 tablespoon sugar
1/2 teaspoon active dry yeast
1 cup lukewarm water
2 tablespoons ghee or unsalted butter, melted
1/4 cup fresh methi leaves (fenugreek)
1/2 cup malai-like mixture (see notes)
Chopped cilantro for garnish

Step-by-Step Instructions:

1. In a large mixing bowl, combine the whole wheat flour, all-purpose flour, salt, sugar, and yeast.
2. Gradually add the lukewarm water to the dry ingredients and mix until a shaggy dough forms.
3. Knead the dough for 5-7 minutes until it becomes smooth and elastic.
4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm, draft-free place for about 1 hour or until it has doubled in size.
5. Preheat a non-stick skillet or tava over medium heat.
6. Divide the dough into 4-6 equal portions, depending on how large you want your naans to be.
7. Roll out each portion into a ball and then flatten it slightly into an oval shape.
8. Place a naan in the preheated skillet and cook for 1-2 minutes or until it starts to puff up and the edges start to curl.
9. Brush the naan with some of the melted ghee or butter, followed by sprinkling a few methi leaves on top.
10. Flip the naan over and cook for another minute, until it’s golden brown and cooked through.
11. Repeat with the remaining dough portions.

Pro Cooking Tips:

To make the malai-like mixture, simply blend together 1/2 cup of almond flour, 1 tablespoon of honey or maple syrup, and 1 tablespoon of lemon juice. You can also adjust the proportions to suit your taste preferences.
For an extra crispy naan, bake it in a preheated oven at 375°F (190°C) for 5-7 minutes after cooking on the skillet.

Serving Suggestions:

Serve these aromatic naans with a warm and comforting bowl of vegetable korma or chana masala.
Pair them with a side of raita, a yogurt-free cucumber and tomato salad, for a refreshing accompaniment.
Use these naans as a base for your favorite Indian wraps, topped with spiced potatoes, cauliflower, or peas.
