Description: Indulge in the rich flavors of Gujarat’s beloved comfort food, Gatte Ki Sabzi, paired with a fragrant and flavorful Tadka Dal. This hearty dish is perfect for special occasions or cozy family dinners.

Prep Time: 20 mins | Cook Time: 40 mins | Servings: 4-6 people

Ingredients:

For the Gatte Ki Sabzi:
+ 1 cup gram flour (besan)
+ 1/2 cup curd
+ 1/4 teaspoon salt
+ 1/4 teaspoon baking soda
+ 1 tablespoon ghee or oil
+ Fresh cilantro leaves for garnish
For the Tadka Dal:
+ 1 cup split red lentils (masoor dal)
+ 2 cups water
+ 2 tablespoons ghee or oil
+ 1 small onion, finely chopped
+ 2 cloves garlic, minced
+ 1 inch ginger, grated
+ 1 teaspoon ground cumin
+ Salt, to taste
+ Fresh cilantro leaves for garnish

Step-by-Step Instructions:

1. Begin by preparing the gatte ki sabzi. In a large mixing bowl, combine gram flour, curd, salt, and baking soda. Mix well until a smooth dough forms. Knead the dough for 5 minutes to develop its texture.
2. Divide the dough into small cylindrical shapes, about 1 inch long and 0.5 inches in diameter. These will be your gatte (steamed dumplings).
3. Steam the gatte over boiling water for 15-20 minutes or until they are cooked through.
4. While the gatte is steaming, prepare the tadka dal. Heat 2 tablespoons of ghee or oil in a large pan over medium heat. Add the chopped onion and sauté until translucent.
5. Add the minced garlic, grated ginger, cumin powder, and salt to the pan. Cook for 1 minute, stirring constantly.
6. Rinse the lentils and add them to the pan along with 2 cups of water. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes or until the dal is tender.
7. Once the gatte are cooked and the tadka dal is ready, combine both in a large serving bowl.

Pro Cooking Tips:

To enhance the flavor of your gatte ki sabzi, use high-quality gram flour that is fresh and has not been sitting for too long.
Adjust the amount of water according to your preference for the tadka dal’s consistency. Some people like it thicker, while others prefer a thinner consistency.

Serving Suggestions:

Serve the Gatte Ki Sabzi with Tadka Dal hot, garnished with fresh cilantro leaves and accompanied by steaming basmati rice or rotis.
Add some crunchy texture to your meal by serving it with a side of roasted vegetables, such as cauliflower or carrots.
