Prep Time: 20 minutes | Cook Time: 30 minutes | Servings: 4-6
Ingredients:
1 cup mixed vegetables (carrots, zucchini, bell peppers, and onions)
1/2 cup cooked brown rice
1/4 cup gram flour (chickpea flour)
1/4 teaspoon cumin powder
1/4 teaspoon coriander powder
1/4 teaspoon garam masala powder
1/4 teaspoon salt
1/8 teaspoon baking soda
2 tablespoons lemon juice
1 tablespoon olive oil
For the gravy:
+ 2 large onions, thinly sliced
+ 2 cloves garlic, minced
+ 1 can (14 oz) diced tomatoes
+ 1 cup vegetable broth
+ 2 tablespoons tomato puree
+ 1 teaspoon garam masala powder
+ 1/2 teaspoon cumin powder
+ Salt, to taste
+ Fresh cilantro leaves, for garnish
Step-by-Step Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a mixing bowl, combine the mixed vegetables, cooked brown rice, gram flour, cumin powder, coriander powder, garam masala powder, salt, and baking soda. Mix well until the ingredients are evenly distributed.
3. Add the lemon juice and olive oil to the mixture and mix again until a dough forms. Cover and refrigerate for at least 30 minutes or overnight.
4. Divide the dough into 6-8 equal portions, depending on how large you want your tikkis to be. Shape each portion into a patty.
5. Place the patties on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until they are lightly browned and crispy.
6. While the patties are baking, heat oil in a large skillet over medium heat. Add the sliced onions and cook until they are translucent and caramelized.
7. Add the minced garlic and cook for another minute, stirring constantly to prevent burning.
8. Stir in the diced tomatoes, vegetable broth, tomato puree, garam masala powder, cumin powder, and salt. Bring the mixture to a simmer and let it cook for 10-15 minutes, or until the gravy has thickened slightly.
Pro Cooking Tips:
To ensure the patties stay crispy, do not overcrowd the baking sheet. Bake them in batches if necessary.
For an added layer of flavor, add some chopped fresh cilantro leaves to the gravy towards the end of cooking time.
Serving Suggestions:
Serve the Vegetable Tikki Masala hot with basmati rice or naan bread for a comforting meal.
Garnish with additional cilantro leaves and serve with a dollop of raita (yogurt-based side dish) to balance out the spiciness.
