Soya sabji with a delicious gravy. Gravy consists of thick yogurt and various spices. Also soya chunks, onions and capsicum are marinated with yogurt.

Ingredients:
For marination:
Soya chunks: 1 cup
Onion: 2 diced
Capsicum: 2 diced
Yogurt: 1/2 cup
Asfoetida or heeng: a pinch
Ginger garlic paste: 1 tbsp
Besan or gram flour: 3 tbsp
Oil: 4 tbsp
Salt: to taste
Red chilli powder: 1/4 tsp
Ajwain: 1 tsp
Turmeric powder: 1/2 tsp
Lemon juice: 2 tbsp
For gravy:
Jeera powder: 1/4 tsp
Garam masala: 1/2 tsp
Coriander powder: 1 tsp
Turmeric powder: 1 tsp
Onions: 1 chopped
Tomatoes: 2 chopped
Red chili powder: 1/2 tsp
Sabji masala: 1 tsp
Oil: 2 tbsp
Hung yogurt: 1/2 cup
Salt: to taste
Coriander: for garnishing
Green chili : for garnish
Method:
1. Soak soya chunks for half an hour in water. Drain water and keep soya chunks aside.
2. Cut onions and capsicum in square shapes.
3. Add all the ingredients of marination in a bowl. Add onions, capsicum, soya chunks in marination.
4. Thread soya chunks and vegetables on satay sticks. First thread 2 soya chunks then one capsicum dice and then onion. Again repeat the steps.
5. Heat a tawa and then put 1 tbsp oil on it. Place satay sticks and shallow fry till they become golden brown and crispy from all sides.
6. Heat oil in a kadai. Add ginger garlic paste. Add heeng powder and mix. Add onion and tomatoes and cook till tomatoes gets cooked and soft.
7. Add salt, red chili powder, jeera powder, sabji masala, coriander powder, turmeric powder and mix well. Add yogurt and mix well.
8. Add fried soya chunks, capsicum, onion and cook on medium flame by adding 1/2 cup water. Put garam masala and mix well.
9. Trasfer it to a serving bowl. Garnish with coriander and green chilli and serve.
