Besan ke gatte is an traditional Rajasthani recipe.Gatte ki sabji is an important part of rajasthani thali.Gattas are made of besan and then added to spicy gravy.I am posting this recipe as i am from Rajasthan and one of my friend also asked me to post some Rajasthani recipes.So here’s the recipe.

Ingredients:
For making gattas:
Besan :1 and half cup
Dahi:1/4 cup.
Salt:to taste
Turmeric powder:1/4 tsp
Salt:to taste
Red chili powder:1/4tsp
Ajwain:1/2tsp
Heeng:A pinch
Oil:1/4tsp
Dhaniya or coriander powder:1/4tsp
Baking Soda:A pinch
For Gravy:
Tomatoes:2 chopped
Onions:2 chopped
Ginger:2tsp grated
Garlic:5 cloves chopped
Green chilies:1 chopped
Coriander:For garnishing
Dahi:1 cup
Salt:to taste
Red chilli powder:1/2tsp
Turmeric powder:1/2tsp
Garam masala powder:1/2tsp
Jeera or cumin seeds:1/2tsp
Jeera powder:1/4tsp
Dhania powder or coriander:1/2tsp
Kasuri methi:1/4tsp
Oil :2tbsp
Method:
For gatte:
1.Mix all ingredients of gatte except dahi.Add dahi gradually to make a firm dough like parathas..Boil water in a pan.
2.Grease your palms and roll dough into 1/2 inch thick cylindrical shape of about 5-6 inch long.
3.When water starts boiling add gatta rolls.(Note that add gatta in boiling water only.)
4.Boil them for about 10-12 minutes.Take out rolls from water and use water for gravy.
5.Let them cool and cut gatte rolls into 1/2 inch pieces.
For gravy:
1.Heat oil in a pan.Add jeera ,when jeera start to splatter add onions ,ginger,garlic and saute for two minutes.
2.Add tomatoes and green chilli .Add all spices as haldi powder,red chilli powder,jeera powder.
3.Add curd and mix well.Also add coriander powder,salt and garam masala.
4.When curd starts to leave oil add water which we have saved earlier.
5.Add gatte pieces and kasuri methi.Let it simmer for 3-4 minutes.
6.Garnish with coriander leaves.
7.Serve hot.Gatta sabji is ready to eat.
