Prep Time: 20 mins | Cook Time: 40 mins | Servings: 4-6
Ingredients:
1 cup split green gram (moong dal)
2 cups water
2 medium onions, finely chopped
3 cloves garlic, minced
1 teaspoon grated ginger
1 tablespoon vegetable oil
1 small onion, thinly sliced
2 teaspoons curry leaves
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (optional)
Salt, to taste
Fresh cilantro, for garnish
Step-by-Step Instructions:
1. Rinse the green gram and soak it in water for at least 4 hours or overnight. Drain the water and blend the dal into a coarse paste using a blender or grinder.
2. Heat oil in a large pan over medium heat. Add the sliced onions and cook until they’re translucent, stirring occasionally (about 8 minutes).
3. Add the minced garlic, grated ginger, cumin, coriander, turmeric powder, and red chili powder (if using) to the pan. Cook for an additional 1-2 minutes, stirring constantly, until the spices are fragrant.
4. Add the blended green gram paste to the pan and stir well to combine with the spice mixture. Cook for about 5 minutes, stirring frequently, until the dal starts to thicken.
5. Gradually add the water to the pan, whisking continuously to prevent lumps from forming. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes or until the curry has thickened to your liking.
6. Stir in salt to taste.
Pro Cooking Tips:
To prevent the dal from becoming too thick, make sure to whisk well when adding water and adjust the consistency accordingly.
For an extra depth of flavor, add a teaspoon of ghee (clarified butter) towards the end of cooking time.
