Best Ethiopian-Style Injera Bread with Spicy Red Lentils Recipe
Description: Experience the bold flavors and textures of Ethiopia with this delectable combination of authentic injera bread and spicy red lentils. The sourdough flatbread, traditionally made from teff flour, is perfectly balanced by the pungent aroma and tangy taste of berbere spice in the lentil dish.
Prep Time: 30 mins | Cook Time: 45 mins | Servings: 4-6
Ingredients:
For the Injera Bread:
2 cups teff flour
1/2 cup all-purpose flour
1/2 teaspoon active dry yeast
1/2 teaspoon baking powder
3/4 teaspoon salt
2 cups water
1 tablespoon vinegar
For the Spicy Red Lentils:
1 cup split red lentils, rinsed and drained
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon berbere spice blend (see notes)
1/2 teaspoon salt
4 cups water or vegetable broth
2 tablespoons tomato paste
2 tablespoons chopped fresh cilantro (optional)
Step-by-Step Instructions:
1. To make the injera bread, combine teff flour, all-purpose flour, yeast, baking powder, and salt in a large bowl. Gradually add the water, stirring to form a smooth batter. Add vinegar and mix well.
2. Cover the mixture with plastic wrap or a damp cloth and let it ferment in a warm place for 24-48 hours, or until it becomes frothy and bubbly.
3. Preheat a non-stick skillet or injera pan over medium-high heat. Pour a small amount of batter onto the skillet and spread evenly to form a thin circle (about 6-8 inches in diameter).
4. Cook the injera for 1-2 minutes on each side, until it’s crispy and slightly puffed. Repeat with the remaining batter.
For the Spicy Red Lentils:
1. In a large pot, heat the oil over medium heat. Add onion and garlic; cook until the onion is translucent.
2. Add cumin, berbere spice blend, salt, lentils, water or broth, tomato paste, and cilantro (if using). Bring to a boil, then reduce heat to low and simmer for 30-40 minutes, or until the lentils are tender.
3. Stir in any remaining liquid and adjust seasoning as needed.
Pro Cooking Tips:
To enhance the flavor of your injera bread, use a high-quality teff flour that is finely milled.
For an extra authentic touch, add 1-2 tablespoons of berbere spice blend to the lentil dish for an intense, spicy flavor.
Serving Suggestions:
Serve the injera bread with a dollop of spicy red lentils and a side of mixed greens or roasted vegetables for a nutritious meal.
Use the injera as a wrap to scoop up flavorful stews or salads, just like in traditional Ethiopian cuisine.
