Prep Time: 15 mins | Cook Time: 20 mins | Servings: 4-6
Ingredients:
1 cup plain yogurt (Dahi)
2 tablespoons vegetable oil
1 large onion, finely chopped
3 cloves garlic, minced
1 teaspoon grated ginger
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/4 teaspoon turmeric powder
1/4 teaspoon red chili powder
Salt, to taste
1 cup besan (gram flour)
2 cups water
Fresh cilantro, for garnish
Step-by-Step Instructions:
1. In a large mixing bowl, whisk together the yogurt and 1 tablespoon of oil until smooth. Add the chopped onion, minced garlic, grated ginger, cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well to combine.
2. Heat the remaining 1 tablespoon of oil in a deep saucepan over medium heat. Add the besan and cook for 2-3 minutes, stirring constantly, until it turns light brown and has a nutty aroma.
3. Gradually add the whisked yogurt mixture to the saucepan with the besan, whisking continuously to prevent lumps. Cook for an additional 5 minutes or until the Kadhi thickens slightly.
4. Add the water and stir well to combine. Bring the mixture to a simmer and cook for 10-12 minutes, stirring occasionally, until it reaches your desired consistency.
Pro Cooking Tips:
To avoid lumps in the Kadhi, whisk the yogurt mixture thoroughly before adding it to the saucepan with the besan.
