Sev puri is a street food from Mumbai. Sev puri is a chat in which small puris or papdis are covered by boiled potatoes , tomatoes , onions and chutneys. Sev puri is sweet, tangy chaat which remind me of my visit to my sister’s place in Gujarat where we used to have these sev puris from chaatwala daily.

Ingredients:
For puris
Maida: 1 cup
Ajwain: 1 tsp
Salt: to taste
Cumin seeds:1/4 tsp
Oil : 1 tbsp for adding in dough + for frying puris.
Others:
Tamarind or imli chutney: 3 tbsp
Green chutney: 3 tbsp
Boiled potatoes: 2 chopped
Onions: 2 chopped
Tomatoes: 2 finely chopped
Coriander: 2 tbsp finely chopped
Sev:1/2 cup
Chaat masala: 3tbsp
Method:
1.Combine maida, salt , ajwain, oil . Knead it into a stiff dough using very little water. Keep it aside for half an hour.
2.Form equal sized balls of the dough. Take one ball and with help of rolling pin roll it into a chapati.
3.Cut it into small circle with help of sharp edge katori. Pierce holes on small cirular dough so that they dont get puffen up when fried.
4.Heat oil in a kadai. Fry papdis till they get light brown colour.
5.Now arrange papdis on plate .Place potatoes, onions and tomato on papdi.
6.Top up with imli chutney and green chutney.
7.Sprinkle sev and chaat masala.
8.Put chopped coriander and serve.
