Sweet and sour Imli chutney is used in almost all chaats as samosa, pani puri, sev puri, dahi vadas etc. etc. You can make this chutney in large quantities and store it in fridge for one month for future use.
Ingredients:
Imli or tamarind: 1 cup
Salt: to taste
Sugar or jaggery(gur): 1 cup
Roasted cumin powder:1/2 tsp
Dry ginger powder or saunth:1/2 tsp
Khajur: 5-6 deseeded and sliced
Red chilli powder: 1/4 tsp
Asafoetida:a pinch
Method:
1.Soak imli for 7-8 hours in 2 cups of water. Boil it and then mash it with hand. Strain and collect all the pulp.
2.Now place this imli pulp in a pan and put it on stove. Add jaggery or gur, salt , red chilli powder,cumin powder , asafoetida, and saunth.Let it simmer on low flame for 10- 15 minutes so that it gets thick. Use a spoon and stir in between so that it does not stick to the base.
3.Add khajur and cook for 2-3 minutes.
4.Let the imli chutney cool. Store in air tight jar and enjoyy this sweet tangy chutney with any chaat.
